Water has quite a high heat capacity. Water has a heat capacity of 4179 J/kg/K, which means you need 4179 J to heat one kg of water by 1 K. For gold it is only 129 J/kg/K (but remember that 1 kg of gold is much smaller in volume than 1 kg of water).
